The idea is to cook using fresh ingredients, but leaving room for substitutions and dietary restrictions. While the recipes wouldn't necessarily be vegan/vegetarian/gluten free, they can be made so.

For the first meal, we’ll do tomato basil pasta!

Ingredients:
- Tubular pasta (such as medium shells, penne, rotini, elbow)
- Aprox 400g small fresh tomatoes (such as 1 pack of Campari tomatoes
found at Ralph’s, or Pearl tomatoes found at Trader Joe’s)
- Pancetta or bacon (optional)
- Garlic
- Fresh basil
- Parmesan
- Extra virgin olive oil
- Salt

OR anything similar you have on hand.

Equipment:
- 1 pot to boil pasta
- 1 large skillet or wide pot for the sauce
